Ingredients

Scale
  • 1 pound ground sausage
  • 7 cups Coleslaw mix
  • 2 tbsp low sodium soy sauce or coconut aminos
  • 1 tbsp ginger
  • 1 tsp garlic powder
  • 1/2 cup green onions
  • Optional: 1 tbsp Red pepper flakes

Instructions

  1. Cook the ground sausage in a large skillet.
  2. Stir and crumble the sausage until it is fully cooked through.
  3. Drain any excess fat from the skillet.
  4. Add the coleslaw mix to the skillet with the cooked sausage.
  5. Stir in the garlic powder.
  6. Add the ginger to the mixture.
  7. Pour in the low sodium soy sauce or coconut aminos.
  8. Stir all ingredients together well.
  9. Cook until the coleslaw mix is tender-crisp.
  10. Serve the egg roll in a bowl in individual dishes.
  11. Top generously with chopped green onions.
  12. Drizzle with more soy sauce (or coconut aminos) or sweet and sour sauce, if desired.

Notes

Don’t overcook the coleslaw mix; aim for tender-crisp.
Adjust the amount of soy sauce to your taste at the end.
For extra heat, add red pepper flakes while cooking.
Green onions are best added fresh just before serving for optimal flavor and crunch.
