Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon fresh baking soda
  • 2 teaspoons fresh baking powder
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon ground cinnamon
  • 2 large egg yolks
  • 2 large egg whites
  • 2 cups mashed sweet potatoes
  • ¼ cup melted butter
  • 1 teaspoon pure vanilla extract
  • ¾ cup milk of choice
  • ¼ cup packed brown sugar

Instructions

  1. Add all-purpose flour, fresh baking soda, fresh baking powder, pumpkin pie spice, and ground cinnamon to a large mixing bowl.
  2. Whisk together the dry ingredients until thoroughly blended.
  3. Set the bowl of dry ingredients aside.
  4. Crack two large eggs and separate the yolks from the whites.
  5. Place the 2 large egg yolks in one medium mixing bowl.
  6. Place the 2 large egg whites in a separate medium mixing bowl.
  7. Set the bowl of egg whites aside for later.
  8. Add mashed sweet potatoes, melted butter, pure vanilla extract, and milk of choice to the mixing bowl with egg yolks.
  9. Whisk the wet ingredients together until fully incorporated and smooth.
  10. Transfer the wet ingredient mixture to the bowl containing the dry ingredient mixture.
  11. Stir the mixtures together just until all ingredients are combined into a batter.
  12. Break up any clumps of flour as needed while stirring.
  13. Set the bowl of batter aside.
  14. Use a hand mixer with a whisk attachment to beat the egg whites.
  15. Beat the egg whites just until they become soft peaks.
  16. Add the packed brown sugar to the bowl with the egg whites.
  17. Resume mixing the egg whites with the hand mixer.
  18. Mix until the sugar is incorporated into the egg whites, forming stiff peaks.
  19. Once the desired stiff peak texture is achieved, transfer the egg white mixture to the bowl of waffle batter.
  20. Gently fold the egg white mixture into the waffle batter.
  21. Fold until the egg white mixture is just incorporated.
  22. Be careful not to overmix the batter.
  23. Preheat your waffle iron according to the manufacturer's instructions.
  24. When the waffle iron is hot, lightly spray both sides of the waffle iron with neutral-tasting cooking spray.
  25. Ensure you spray all sides and crevices to prevent sticking.
  26. Portion the waffle batter into the waffle iron mold.
  27. Use a cookie scoop with a release handle, a ladle, or a measuring cup for portioning.
  28. Once the mold is filled, close the waffle iron.
  29. Cook the waffles for approximately 5 minutes.
  30. Alternatively, cook until the waffle iron is no longer steaming and the waffles are golden brown on both sides.
  31. Carefully remove the cooked waffles from the waffle iron.
  32. Transfer the waffles to a large plate.
  33. Repeat the process until all waffle batter has been cooked.
  34. Spray the waffle iron with cooking spray as needed to prevent sticking between batches.
  35. When all batter has been cooked, divide the waffles into preferred portions.
  36. Serve warm with your desired toppings.
