A delightful and comforting casserole featuring roasted sweet potatoes, warm spices, maple syrup, and a crunchy pecan topping.

  • 4 large organic sweet potatoes, peeled + cubed
  • 2-3 Tbsps extra virgin olive oil
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ cup Almond milk
  • 2 tsps vanilla extract
  • 4 Tbsps unsalted butter, cubed into small pieces
  • ⅓ cup organic brown sugar
  • ¼ cup pure maple syrup
  • 1 teaspoon ground cinnamon
  • ⅛ teaspoon ground nutmeg
  • Pinch of ground allspice
  • 1 cup organic raisins, soaked + drained
  • 2 cups marshmallows
  • 1 ½ cups raw pecans
  • ¼ cup pure maple syrup

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Line a baking sheet with parchment paper.
  3. Add the cubed sweet potatoes to a bowl.
  4. Add the olive oil, 1 teaspoon cinnamon, and ½ teaspoon nutmeg to the bowl with the sweet potatoes.
  5. Gently mix everything together until the sweet potatoes are fully coated.
  6. Add the sweet potatoes onto the prepared baking sheet in a single layer.
  7. Bake for 50-60 minutes, or until the sweet potatoes are tender, charred, and golden.
  8. Remove the sweet potatoes from the oven and let them cool slightly.
  9. Lower the oven temperature to 375 degrees Fahrenheit.
  10. Lightly grease a large 9×13 baking dish.
  11. In a large bowl, combine the roasted sweet potatoes, almond milk, vanilla extract, brown sugar, ¼ cup maple syrup, 1 teaspoon cinnamon, ⅛ teaspoon nutmeg, and a pinch of allspice.
  12. Add the soaked and drained raisins and 2 cups marshmallows to the bowl.
  13. Mix everything together until combined. It's okay if some sweet potato mashes.
  14. Scoop the mixture into the prepared baking dish.
  15. Evenly spread the mixture out.
  16. Tuck the cubed pieces of unsalted butter in between parts of the casserole mixture.
  17. Optionally, tuck in a few additional marshmallows into the sweet potato mixture, pressing them in gently.
  18. In a separate bowl, add the raw pecans and ¼ cup maple syrup.
  19. Stir until the pecans are combined with the maple syrup.
  20. Generously add the pecan topping over the sweet potato casserole mixture until fully covered.
  21. Cover the baking dish with foil paper.
  22. Bake the casserole with foil for approximately 15 minutes.
  23. Remove the foil paper.
  24. Finish baking for the remaining 15 minutes, or until the top is golden brown and the marshmallows have melted.
  25. Remove the casserole from the oven.
  26. Let it cool slightly before serving.

Notes

Ensure sweet potatoes are in a single layer when roasting for best caramelization.
Soak raisins in warm water for 10-15 minutes, then drain before adding to the filling for plumpness.
Don’t over-mash the sweet potatoes; a mix of textures is wonderful.
For extra gooeyness, add a few extra marshmallows to the filling and under the pecan topping.
