Instructions
- Line a cookie sheet with parchment paper.
- Lay out 1 sleeve of Ritz crackers with the flat side facing up on the prepared cookie sheet.
- Spread approximately 2 teaspoons of peanut butter on each cracker.
- Carefully place another cracker on top of each peanut butter-covered cracker to create a sandwich, with the rounded side up.
- Place the white chocolate melting wafers in a microwave safe bowl.
- Heat the white chocolate for 1 minute.
- Stir the white chocolate.
- Heat for another minute and stir again until melted and smooth.
- Add 1-2 tablespoons of coconut oil if needed to thin the chocolate, stirring until smooth.
- Dunk each peanut butter sandwich cookie into the melted white chocolate, ensuring it is completely coated.
- Use a fork to lift the cookie from the chocolate, tapping off any excess melted chocolate.
