Creamy, cozy, and packed with protein, these overnight oats taste just like pumpkin pie in a healthy breakfast form.

Ingredients

  • ½ cup old fashioned rolled oats
  • ½ tablespoon ground flaxseed
  • ½ teaspoon pumpkin pie spice
  • 1 scoop vanilla collagen powder
  • ¼ cup pumpkin purée
  • ½ mashed spotty brown banana
  • ½ cup unsweetened almond milk
  • toppings of choice

Instructions

  1. Combine old fashioned rolled oats, ground flaxseed, pumpkin pie spice, vanilla collagen powder, pumpkin purée, mashed spotty brown banana, and unsweetened almond milk in a bowl.
  2. Stir all ingredients together until well combined.
  3. Pour the mixture into a jar with a lid or an airtight container.
  4. Store the container in the fridge overnight, or for at least 4 hours.
  5. The next morning, remove from the fridge.
  6. Top with desired toppings, such as Greek yogurt and chopped pecans, before serving.

Notes

Use a very ripe, spotty banana for natural sweetness.
For best results, let the oats soak overnight for at least 8 hours.
Ensure you use pure pumpkin purée, not pumpkin pie filling.
Feel free to customize toppings with nuts, seeds, or a drizzle of maple syrup.
