  • ½ cup plain nonfat Greek yogurt
  • ¼ cup unsweetened vanilla almond milk or milk of choice
  • 2 tablespoons vanilla protein powder (1/2 scoop)
  • ½ cup old-fashioned rolled oats gluten free if needed
  • 2 teaspoons coconut sugar or substitute turbinado sugar, brown sugar, maple syrup, honey, or other sweetener of choice
  • ¼ teaspoon pure vanilla extract
  • ⅛ teaspoon pure almond extract optional
  • Small pinch kosher salt

Instructions

  1. Briskly whisk the Greek yogurt, almond milk, and protein powder together in a mixing bowl or large measuring cup.
  2. Add the oats, coconut sugar, vanilla extract, almond extract, and salt.
  3. Whisk to completely combine all ingredients.
  4. Cover the mixture with plastic wrap or seal the lid of your jar.
  5. Refrigerate for a minimum of 8 hours or up to 5 days.
  6. When ready to serve, stir the oats once more.
  7. Transfer the mixture to a serving bowl.
  8. If the mixture is too thick, thin it with a little extra almond milk.
  9. Sprinkle with any desired toppings and enjoy immediately.

Notes

Ensure you use old-fashioned rolled oats for the best texture.
Whisk thoroughly to prevent any protein powder clumps.
Allow at least 8 hours of refrigeration for proper softening.
