Whip up these easy, protein-packed pancakes using just your blender for a wholesome and satisfying breakfast.

  • ½ cup Greek yogurt, plain or vanilla (0%, 2% or 5%)
  • ⅔ cup almond milk, or any milk
  • 2 tablespoon real maple syrup
  • 1 ½ teaspoon vanilla extract
  • 2 cups rolled oats
  • 2 ¼ teaspoon baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt, optional
  • Maple syrup, optional topping
  • Optional mix-ins: blueberries, chocolate chips, banana slices, chia seeds

Instructions

  1. Add eggs to a blender.
  2. Add Greek yogurt to the blender.
  3. Pour almond milk into the blender.
  4. Add real maple syrup to the blender.
  5. Pour vanilla extract into the blender.
  6. Add rolled oats to the blender.
  7. Add baking powder to the blender.
  8. Add cinnamon to the blender.
  9. Add salt (if using) to the blender.
  10. Blend all ingredients until smooth, about 20 to 40 seconds.
  11. Ensure the batter is pourable with no visible chunks of oats.
  12. Let the batter rest for 8 minutes.
  13. While batter rests, heat a large nonstick pan over medium-low heat.
  14. Lightly grease the pan.
  15. Test the pan heat by dropping a small amount of water; it should sizzle on contact.
  16. Pour about ¼ to ⅓ cup batter per pancake onto the hot pan.
  17. Add any optional mix-ins to the wet batter.
  18. Cook pancakes for 2 to 3 minutes.
  19. Wait until the edges look set and the top turns from glossy to matte.
  20. Flip each pancake.
  21. Cook for about 1 minute more.
  22. Ensure the bottom is golden brown and the center springs back when lightly pressed.
  23. Serve warm with fresh fruit, maple syrup, or nut butter.
  24. For a big batch, keep cooked pancakes warm in a 200°F oven.
