Soft and chewy cookies packed with crushed Oreo cookies and sweet white chocolate chips.

Ingredients

  • 1 cup + 2 Tablespoons (135g) all-purpose flour
  • 1 teaspoon (2.5g) cornstarch
  • ¾ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 4 Tablespoons (57g) unsalted butter softened to room temperature
  • ½ cup + 2 Tablespoons (125g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 10 Oreo cookies coarsely chopped
  • ½ cup (85g) white chocolate chips

Instructions

  1. Preheat your oven to 350ºF (177ºC).
  2. Line a baking sheet with parchment paper or a silicone baking mat.
  3. Set the prepared baking sheet aside.
  4. In a small bowl, whisk together the all-purpose flour, cornstarch, baking powder, baking soda, and salt.
  5. Set the dry ingredients aside.
  6. In a medium-sized bowl, using a hand-held mixer or a stand mixer with a paddle attachment, cream together the softened unsalted butter and granulated sugar on medium speed.
  7. Scrape down the sides and bottom of the bowl with a spatula to ensure even mixing.
  8. Add the large egg and vanilla extract to the creamed butter and sugar.
  9. Beat again on medium speed until all ingredients are combined and there are no lumps.
  10. Reduce the mixer speed to low.
  11. Slowly add the whisked dry ingredients to the wet ingredients.
  12. Mix until a dough just forms.
  13. Add the coarsely chopped Oreo cookies and white chocolate chips to the dough.
  14. Beat on low speed until the Oreos and white chocolate chips are evenly dispersed throughout the dough.
  15. Using a cookie scoop (approximately 1.5-2 tablespoons per scoop), drop rounded balls of dough onto the prepared baking sheet.
  16. You may lightly round the dough balls with your hand, but it is not required as the dough is soft.
  17. Bake for 9-11 minutes, or until the sides of the cookies are set and the centers still look slightly underbaked.
  18. Remove the baking sheet from the oven.
  19. Allow the cookies to cool on the baking sheet for about 5 minutes.
  20. Carefully transfer the cooled cookies to a wire rack to cool completely.

Notes

Do not overmix the dough once the flour is added for tender cookies.
Slightly underbake the cookies for a chewier center.
Ensure butter is at room temperature for best creaming results.
A cookie scoop helps create uniformly sized cookies for even baking.
