Deliciously rich and fudgy red velvet cake balls coated in vanilla, perfect for parties or a sweet treat.

  • 15.25 oz Red velvet cake mix
  • 8 oz block cream cheese, softened
  • 20 oz vanilla melting wafers
  • Sprinkles (optional)
  • ½ Cup red candy melts (optional)

Instructions

  1. Preheat the oven to 350 degrees F (175 C).
  2. Line a baking sheet with parchment paper.
  3. Pour the dry red velvet cake mix onto the parchment paper.
  4. Spread the cake mix out evenly.
  5. Bake the dry cake mix for about five minutes in the preheated oven.
  6. Check the internal temperature of the cake mix; it should reach 165 degrees F (74 C).
  7. Remove the baking sheet from the oven.
  8. Let the heat-treated cake mix cool completely.
  9. Whip the softened cream cheese in a medium bowl with a hand mixer until it is a smooth consistency.
  10. Once the cake mix has cooled completely, add it into the whipped cream cheese.
  11. Beat the mixture again on medium-high speed until fully combined.
  12. Continue mixing until the red velvet cake crumbs and cream cheese have mixed together into almost a cookie dough texture.
  13. Cover the bowl with plastic wrap.
  14. Place the bowl in the refrigerator to chill for 2 hours.
  15. Line two clean baking sheets with parchment paper.
  16. Use a 1 1/2 tablespoon cookie scoop to get a portion of the chilled cake ball dough.
  17. Roll the mixture into a smooth ball.
  18. Place the rolled ball onto one of the prepared baking sheets.
  19. Repeat the rolling process, leaving a little space in between each ball, until you’ve rolled out all the balls.
  20. Let the dough balls set at room temperature for 15 minutes.
  21. Melt the vanilla melting wafers using either a double boiler on the stove or a microwave.
  22. If using a microwave, place the wafers into a large, microwave-safe bowl.
  23. Microwave on high for 30 seconds.
  24. Stir the wafers thoroughly.
  25. Place them back in the microwave for another 30 seconds.
  26. Repeat the microwaving and stirring process until the vanilla melting wafers are completely melted and smooth.
  27. Dip each of the cake balls into the melted wafers, ensuring they are fully coated.
  28. Tap any excess chocolate off at the top of the bowl.
  29. Place the dipped cake ball back onto the parchment paper to allow the chocolate to harden.
  30. If using sprinkles, add them while the coating of the cake balls is still wet.
  31. If adding additional red candy melt drizzles, melt the red candy melts in the same way you melted the vanilla wafers.
  32. Drizzle the melted red candy melts on top of the coated cake balls either by hand or with a piping bag.
  33. Let the chocolate coating set completely.
  34. Serve the No Bake Red Velvet Cake Balls once the coating is firm.

Notes

Ensure cream cheese is fully softened for a smooth mixture.
Chilling the mixture for the full 2 hours is crucial for easy rolling.
Microwave melting wafers in short bursts, stirring frequently to prevent burning.
Add sprinkles immediately after dipping while the coating is still wet.
