These no-bake Monster Energy Balls are packed with oats, peanut butter, honey, and fun mix-ins, perfect for a quick snack.

Ingredients

  • 3 cups quick oats
  • 1 cup creamy peanut butter
  • 1/2 cup honey
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon fine sea salt
  • 1/2 cup miniature M&M’s
  • 1/4 cup + 2 tablespoons mini chocolate chips

Instructions

  1. Add quick oats, creamy peanut butter, honey, vanilla extract, and fine sea salt to a very large bowl.
  2. Beat with a hand mixer on low speed until a thick mixture forms.
  3. Alternatively, combine all ingredients in the bowl of a stand mixer and, using the paddle attachment, mix until a thick mixture forms.
  4. If the mixture is too sticky, add a few more tablespoons of oats and mix again.
  5. If the mixture is too dry, add a little more peanut butter or honey and mix again until it rolls easily.
  6. Use a 1-tablespoon measuring spoon or a 1-1/2 tablespoon cookie scoop to portion the dough.
  7. Tightly roll the portions into balls.
  8. Place the rolled balls on a parchment-lined plate or tray.
  9. Refrigerate for 30 minutes to 1 hour, or until firm.
  10. Transfer to an airtight container for storage.

Notes

Use creamy peanut butter for the best consistency.
Chill the mixture for 10-15 minutes before rolling if it’s too sticky.
A cookie scoop helps create uniform balls.
Store in an airtight container in the refrigerator for up to 2 weeks.
