Chewy, flavorful fruit snacks secretly packed with healthy steamed vegetables, perfect for a guilt-free treat.

Ingredients

  • 1 1/2 cups diced mango chunks, defrosted if frozen
  • 1 medium carrot, steamed until soft
  • 2 tablespoons of honey
  • 1/4 cup water
  • 5 tablespoons grass-fed beef gelatin powder
  • 2 cups halved strawberries
  • 1 small beet, steamed until soft
  • 2 tablespoons of honey
  • 1/4 cup water
  • 5 tablespoons grass-fed beef gelatin powder

Instructions

  1. Line a 9-inch bread loaf pan with parchment paper and spray it with cooking spray.
  2. Place the fruit and cooked vegetable of choice (mango and carrot, or strawberries and beet) in a high-speed blender.
  3. Add the water and honey to the blender.
  4. Puree until VERY smooth, at least 5 minutes.
  5. Taste the mixture; add more honey if you think it needs it, and blend again until smooth.
  6. Pour the mixture into a large-bottomed stock pot.
  7. Sprinkle the gelatin evenly over the surface of the mixture.
  8. Allow the mixture to sit undisturbed for 5 minutes until the surface is wrinkled.
  9. Turn the burner to medium heat.
  10. Whisk the gelatin into the fruit puree constantly until the mixture is smooth and the gelatin is fully dissolved.
  11. Do not let the mixture boil.
  12. Pour the smooth mixture into the prepared loaf pan.
  13. Allow to set for at least 3-4 hours, or ideally overnight (covered).
  14. Use mini pie cutters to cut out cute shapes.
  15. Use scissors to cut up any scraps into small pieces and mix them into the shapes.

Notes

Ensure vegetables are very soft for a smooth puree.
Blend for the full 5 minutes for the best texture.
Always bloom the gelatin first before whisking it into the warm puree.
Do not boil the mixture, as this can weaken the gelatin’s setting power.
