Healthy Chocolate Overnight Oats

A delicious and easy make-ahead breakfast, these healthy chocolate overnight oats are rich, creamy, and naturally sweetened.

Ingredients

  • 1 cup whole rolled oats (gluten free, if needed)
  • 2 tablespoons chia seeds
  • 2 tablespoons pure maple syrup
  • 2 tablespoons natural almond butter
  • 2 heaping tablespoons plant-based chocolate protein powder (optional, see notes)
  • 2 heaping tablespoons cocoa powder
  • 1 1/2 cups unsweetened vanilla almond milk
  • 2 heaping tablespoons mini dark chocolate chips

Instructions

  1. Combine the oats, chia seeds, maple syrup, almond butter, protein powder (if using), cocoa powder, and almond milk in a bowl.
  2. Mix all ingredients very well to combine thoroughly.
  3. Stir in the mini dark chocolate chips.
  4. Divide the mixture evenly between two jars or tupperware containers.
  5. Place the containers in the fridge.
  6. Leave them to chill overnight, or for a minimum of 5 hours.
  7. In the morning, before eating, warm one serving in the microwave for 30 seconds (optional).
  8. Top with an additional drizzle of almond butter and a sprinkle of chocolate chips.
  9. Serve and enjoy!

Notes

For gluten-free oats, ensure you use certified gluten-free rolled oats.
If omitting protein powder, you may want to add an extra teaspoon of cocoa powder for richer flavor.
Heating in the microwave is optional; these are also delicious cold.
Store in airtight containers for up to 3-4 days in the refrigerator.
