HEALTHY CHICKEN BROCCOLI PASTA CASSEROLE

A comforting, creamy, and cheesy pasta casserole packed with chicken and broccoli, perfect for a hearty family meal.

Ingredients

  • 8 oz pasta
  • 12 oz broccoli – I used frozen cut broccoli
  • 2 tbsp butter or olive oil
  • 1 small onion, thinly sliced
  • 4 cloves garlic, minced
  • 3 tbsp flour
  • 1 cup chicken stock (vegetable stock could also be used)
  • 1 1/2 cup milk
  • 1 tsp Dijon mustard
  • 1/2 tsp sea salt
  • 1/4 tsp fresh-cracked black pepper
  • 2 cups shredded sharp cheddar cheese, divided (8 oz)
  • 1 lb diced cooked chicken

Instructions

  1. Pre-heat oven to 400°F.
  2. Cook pasta in a large pot of generously salted boiling water until al dente.
  3. Add the broccoli to the pasta water and stir until combined, about 2 minutes before the pasta is done.
  4. Drain the pasta and broccoli.
  5. Melt the butter or oil in a sauté pan over medium-high heat.
  6. Add the onion and cook for 3 minutes, stirring occasionally.
  7. Add the garlic and cook for 3 more minutes, stirring occasionally.
  8. Sprinkle the flour over the onion and garlic mixture.
  9. Stir until combined and cook for an additional 1 minute.
  10. Slowly add in the stock, stirring everything together until mostly smooth and clumps are gone.
  11. Add in the milk, Dijon mustard, salt, and pepper.
  12. Stir until fully combined.
  13. Continue to cook the sauce until it reaches a simmer.
  14. Remove the sauce from heat.
  15. Stir in 1 cup of the shredded cheese until thoroughly melted and combined.
  16. Combine the cooked pasta, broccoli, chicken, and cheese sauce in a 9 x 13-inch baking dish.
  17. Toss until combined.
  18. Even out the ingredients in the casserole dish.
  19. Bake uncovered for about 15 minutes.
  20. Remove pan from the oven.
  21. Sprinkle the remaining cheddar cheese over the top of the casserole.
  22. Bake for 10 minutes or until the cheese is nice and melted.
  23. Serve warm.

Notes

Cook pasta al dente to prevent it from becoming mushy in the oven.
Shred your own cheese for a smoother melting sauce.
Don’t skip the Dijon mustard; it adds a subtle, delicious tang.
This casserole is great for using up leftover cooked chicken.
