A delightful homemade pop tart shaped like a gingerbread house, complete with a warm cinnamon-brown sugar filling and festive icing.

Ingredients

  • 2½ cups all purpose flour
  • 1 teaspoon salt
  • 2 teaspoons granulated sugar
  • ½ teaspoon cinnamon
  • 1 cup unsalted butter cold, cubed
  • 3-4 tablespoons water cold
  • 1 egg
  • 2 teaspoons water
  • ½ cup light brown sugar
  • 2 teaspoons cinnamon
  • 1 tablespoon all purpose flour
  • ¼ teaspoon salt
  • ¼ teaspoon vanilla extract
  • ¾ cup powdered sugar
  • ½ teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • 1 tablespoon whole milk, heavy cream or water
  • ½ cup powdered sugar
  • 2 tablespoon heavy cream or milk

Instructions

  1. Fill a small bowl with cold water and an ice cube. Set aside.
  2. Chop butter into cubes and place in the fridge or freezer for about 15 minutes.
  3. In a food processor, pulse to combine the flour, cinnamon, sugar, and salt.
  4. Add the cubed butter and pulse until the dough resembles wet sand.
  5. Add ice water a tablespoon at a time while continuing to pulse mixture until it is just combined.
  6. Turn dough out onto a sheet of plastic wrap.
  7. Divide dough in half.
  8. Place each half on a separate sheet of plastic wrap.
  9. Loosely wrap each ball in plastic wrap.
  10. Gently press each dough ball into a flat oval disk.
  11. Place each disk in the fridge for at least 30 minutes or up to two days.
  12. Make the cinnamon brown sugar filling and prepare the egg wash while the dough chills.
  13. Line two baking sheets with parchment paper.
  14. Cut out a gingerbread house template out of parchment paper.
  15. Generously flour your counter.
  16. Remove one dough disk from the fridge.
  17. Gently roll the first disk out on your floured counter into a rectangle 9″ x 12″ in size.
  18. Use a pizza cutter or knife to trim the edges.
  19. Carefully transfer dough to a baking sheet.
  20. Place the baking sheet in the fridge.
  21. Roll out the second dough disk to the same size as the first one.
  22. Brush the edge of the first crust with a 1-inch border of egg wash.
  23. Spoon and spread a thick layer of the cinnamon brown sugar filling over the dough.
  24. Leave a 1 inch border around the filling.
  25. Carefully place the top crust over the bottom crust.
  26. Gently press the edges of the dough with your fingertips to seal the top and bottom crusts together.
  27. Use a fork to crimp the edges.
  28. Use a fork or a toothpick to poke holes throughout the dough.
  29. Place the assembled pop tart in the fridge for 30 minutes.
  30. Preheat oven to 375 F.
  31. Remove dough from fridge.
  32. Brush all over with the egg wash.
  33. Bake for 20-23 minutes or until golden brown.
  34. Rotate the pan halfway through cooking.
  35. Remove from heat and allow to cool completely before icing.
  36. In a small bowl, whisk together the egg and 2 teaspoons water for the egg wash.
  37. Stir together the brown sugar, 2 teaspoons cinnamon, 1 tablespoon flour, vanilla, and salt for the filling.
  38. Stir together ¾ cup powdered sugar, ½ teaspoon vanilla extract, ½ teaspoon cinnamon, and 1 tablespoon whole milk/heavy cream/water for the Cinnamon Icing.
  39. Stir together ½ cup powdered sugar and 2 tablespoons heavy cream/milk for the Powdered Sugar Icing.
  40. Use the back of a spoon, an offset spatula or a spatula to spread the cinnamon icing over the gingerbread house.
  41. Pipe some powdered sugar icing over the roof and windows of the house to add the look of snow.
  42. Use a piping bag with a small round tip or spoon/pour icing to a sandwich bag and snip off the corner.
  43. While icing is still wet, sprinkle some sprinkles or sanding sugar on the icing, if desired.

Notes

Ensure your butter and water are ice cold for the flakiest dough.
Do not overmix the dough in the food processor; pulse only until combined.
Chill the dough for the recommended times to prevent shrinking and make it easier to handle.
Allow the pop tart to cool completely before icing to prevent the icing from melting.
