Fudgy, chewy brownies infused with warm ginger and cinnamon spices, perfect for a cozy treat.

  • 1 cup (2 sticks / 227 g) unsalted butter, melted
  • 1 ½ cups (300 g) light brown sugar, packed
  • 2 large eggs, room temperature
  • 2 tablespoons molasses
  • 1 teaspoon vanilla extract
  • 2 ½ cups (312.5 g) all-purpose flour
  • 1 tablespoon ground ginger
  • 2 teaspoons cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon kosher salt
  • confectioners' sugar, for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a 9×9-inch baking dish with parchment paper.
  3. Leave some parchment paper overhang on the sides of the pan.
  4. Set the prepared pan aside.
  5. In a large bowl, melt the unsalted butter.
  6. Add the light brown sugar to the melted butter.
  7. Stir the butter and brown sugar together very well.
  8. Mix in the eggs one at a time.
  9. Add the molasses to the butter mixture.
  10. Add the vanilla extract to the butter mixture.
  11. Stir until all wet ingredients are combined.
  12. In a separate medium bowl, whisk together the all-purpose flour.
  13. Add the ground ginger to the flour.
  14. Add the cinnamon to the flour.
  15. Add the baking powder to the flour.
  16. Add the kosher salt to the flour.
  17. Whisk all dry ingredients together until well combined.
  18. Gradually add the flour mixture to the wet butter and egg mixture.
  19. Stir until the flour mixture is just combined into the wet mixture.
  20. Do not overmix the batter.
  21. Spread the brownie batter evenly into the prepared 9×9-inch pan.
  22. Bake for 30 to 35 minutes.
  23. Alternatively, if using a 9×13-inch pan, bake for 25 to 30 minutes.
  24. Bake until the edges are set and the center is no longer jiggly.
  25. Allow the brownies to cool completely in the pan.
  26. Sprinkle the cooled brownies with confectioners' sugar.
  27. Cut the brownies into squares.
  28. Serve and enjoy!

Notes

Ensure eggs are at room temperature for better emulsification.
Do not overmix the batter once flour is added to keep brownies fudgy.
Cool brownies completely before cutting for clean slices.
Use fresh spices for the best gingerbread flavor.
