  • ½ teaspoon salt
  • ¼ cup melted butter regular or non-dairy
  • 2 tablespoon maple syrup
  • 3 teaspoon active dry yeast
  • 1 tablespoon yogurt plain and unsweetened
  • 2 ½ cups regular all purpose flour or 2 cups gluten-free all purpose flour
  • ⅓ cup softened butter regular or non-dairy
  • ¼ cup sugar
  • 4 tablespoon rainbow sprinkles add more as needed
  • 2 tablespoon softened butter regular or non-dairy
  • 2 oz cream cheese regular or non-dairy
  • ¾ cup powdered sugar

Instructions

  1. Prepare the dough by mixing the warm milk, melted butter, maple syrup, and salt together.
  2. Sprinkle the active dry yeast evenly across the top of the mixture.
  3. Stir gently.
  4. Let it sit for about 10 minutes.
  5. Add the flour (2 ½ cups of regular flour or 2 cups of gluten free flour) and mix until a dough forms.
  6. If using gluten-free flour, use your hands to work in the yogurt into the dough to help the dough together.
  7. Leaving the dough in the bowl, form it into a round mound.
  8. Cover the bowl with plastic wrap or a kitchen towel.
  9. Allow it to sit for an hour.
  10. Preheat the oven to 350°F (175°C) to create a warm spot for rising.
  11. After the dough has risen for an hour, place it on a floured surface.
  12. Roll the dough into a ¼ inch oval or rectangle.
  13. Spread the softened butter to cover the dough.
  14. Top with the sugar and rainbow sprinkles.
  15. Roll the dough into a log.
  16. Cut it into about 10 pinwheels.
  17. Alternatively, use a pizza cutter to slice the dough into strips and then roll each individual strip into a pinwheel.
  18. Place the pinwheels into a baking dish so that they are close but not touching.
  19. Cover them with a towel.
  20. Set aside for another 30 minutes.
  21. Remove the towel.
  22. Bake the rolls in the oven for about 35 minutes for regular funfetti rolls.
  23. Bake for 25-30 minutes for gluten-free funfetti rolls (or until they are golden).
  24. While the rolls are baking, make the cream cheese frosting.
  25. Use an electric hand mixer to mix together the softened butter, powdered sugar, and cream cheese.
  26. Allow the rolls to cool.
  27. Spread the icing over the rolls.
  28. Enjoy!

Notes

Ensure milk is warm (105-115°F) for yeast activation, not hot.
For gluten-free rolls, the yogurt helps significantly with dough texture.
Don’t overbake; rolls should be golden, not hard.
Let rolls cool slightly before icing to prevent melting.
