  • 1 cup (226g) unsalted butter
  • 2 cups (380g) granulated sugar
  • 2 large eggs
  • 1 teaspoon (5ml) vanilla extract
  • 3 ½ cups (420g) all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon cream of tartar
  • 1/2 teaspoon salt
  • 1 cup (226g) unsalted butter
  • 3 ½ cups (455g) powdered sugar
  • 1 tablespoon (15ml) heavy whipping cream
  • 1 teaspoon (15ml) vanilla bean paste or vanilla extract

Instructions

  1. Preheat your oven to 375° F (190°C).
  2. Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides.
  3. Combine 1 cup softened unsalted butter and granulated sugar in a large bowl.
  4. Beat the butter and sugar on medium speed until well creamed and fluffy.
  5. Add the large eggs to the butter mixture.
  6. Add 1 teaspoon vanilla extract to the butter mixture.
  7. Mix until the eggs are well beaten and fully incorporated.
  8. In a separate medium bowl, combine the all-purpose flour, baking soda, cream of tartar, and salt.
  9. Slowly add the dry ingredients into the wet batter.
  10. Beat on medium-low speed until all ingredients are well combined and a dough forms.
  11. Press the cookie dough evenly into the prepared 9×13 inch pan.
  12. Bake at 375°F (190°C) for 18-20 minutes.
  13. The edges should be lightly golden and the center set.
  14. Allow the cookie bars to cool completely in the pan on a wire rack.
  15. To make the frosting, cut the remaining 1 cup unsalted butter into pieces.
  16. Using the paddle attachment of a stand mixer, whip the butter for 5-7 minutes.
  17. Scrape down the bowl occasionally during whipping.
  18. Beat until the butter looks light in color and is very fluffy.
  19. Add 2 cups of powdered sugar to the whipped butter.
  20. Mix on low speed until the sugar is incorporated into the butter.
  21. Add the heavy whipping cream and mix to combine.
  22. Add the remaining powdered sugar.
  23. Add the vanilla bean paste or vanilla extract.
  24. Whip the frosting on high speed for at least 2 minutes.
  25. Whip until the frosting is light and fluffy.
  26. Spread the prepared frosting evenly over the completely cooled cookie bars.
  27. Slice the frosted bars into desired sizes.
