Creamy Tuscan Tortellini Soup

A rich, creamy, and satisfying soup featuring tender tortellini, fresh tomatoes, and flavorful Tuscan herbs.

Ingredients

  • 1 tablespoon Extra virgin olive oil
  • 4 garlic cloves, minced
  • 4 Tbsps organic all-purpose flour
  • 1 ½ Tbsps Tuscan Marry Me Blend
  • 1 teaspoon smoked paprika
  • 1 teaspoon sea salt
  • 3-4 Tbsps organic tomato paste
  • 5-6 sundried tomatoes, optional
  • 4 cups chicken or vegetable stock, organic
  • 1 ½ cups organic heavy cream
  • ½ lemon, freshly-squeezed
  • 1 cup chopped kale, organic
  • 2 cups cherry or grape tomatoes, halved or whole
  • 2 (8 oz.) packages organic cheese + spinach tortellini
  • 2 bay leaves, optional
  • 1 cup freshly-grated parmesan

Instructions

  1. Heat 1 tablespoon of olive oil in a medium-sized Dutch oven pot over medium-high heat.
  2. Add the minced garlic to the pot.
  3. Add the sundried tomatoes (if using) and fresh cherry or grape tomatoes to the pot.
  4. Sauté the garlic, sundried tomatoes, and fresh tomatoes until fragrant, about 1-2 minutes.
  5. Stir in the 1 ½ Tbsps Tuscan Marry Me Blend, 1 teaspoon smoked paprika, and 1 teaspoon sea salt until combined.
  6. Add 3-4 Tbsps tomato paste and 4 Tbsps all-purpose flour to the pot.
  7. Continue to stir until the tomato paste and flour are fully combined with the other ingredients.
  8. Slowly add 4 cups of chicken or vegetable stock to the pot, stirring frequently to avoid lumps.
  9. Stir until the soup base has thickened.
  10. Add ½ freshly-squeezed lemon juice to the pot.
  11. Pour in 1 ½ cups organic heavy cream.
  12. Add 2 (8 oz.) packages of tortellini to the soup.
  13. Stir in 1 cup chopped kale.
  14. Add 2 bay leaves (if using).
  15. Stir everything to combine.
  16. Let the soup simmer for another 8-10 minutes, or until the soup has thickened nicely and the tortellini are fully cooked through and tender.
  17. Remove the pot from the heat.
  18. Stir in 1 cup freshly-grated parmesan until smooth and the cheese has melted.
  19. Serve immediately into prepared bowl(s).
  20. Top with additional freshly-grated parmesan, if desired.
  21. Serve with a side of garlic bread, toasted bread, crackers, or a house salad, if desired.

Notes

For a homemade Tuscan Marry Me Blend, combine 1 Tbsp dried basil, 1 Tbsp dried oregano, 1 tsp dried thyme, ½ tsp garlic powder, ½ tsp onion powder, and ¼ tsp red pepper flakes.
Taste the soup before serving and adjust salt or other seasonings as needed.
Do not overcook the tortellini; they will become mushy.
Freshly grated Parmesan melts much better and provides a superior flavor compared to pre-shredded.
