  • 4 ounces cream cheese, room temperature
  • 1 cup granulated white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1/2 teaspoon baking powder
  • 1 3/4 cup cake flour

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and room temperature cream cheese with an electric mixer until light and fluffy.
  3. Add the granulated sugar and beat for 1 minute until well combined and smooth.
  4. Add the egg and beat until just combined.
  5. Stir in the vanilla extract and almond extract until fully incorporated.
  6. Add the baking powder to the mixture.
  7. Gradually add the cake flour in three sections, mixing gently after each addition until just combined. Be careful not to overmix.
  8. Cover the dough and refrigerate for at least 1 hour.
  9. Preheat your oven to 375 degrees F.
  10. Lightly flour your hands, as the dough will be sticky.
  11. Roll the dough into 1 to 2-inch balls.
  12. Gently flatten each dough ball using the bottom of a cup or glass dipped in flour. Do not flatten too much.
  13. Place the flattened dough balls on the prepared baking sheet.
  14. Bake for 9-11 minutes, or until the edges are lightly golden brown.
  15. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
