Festive, no-bake coconut balls coated in chocolate, drizzled with white chocolate, and topped with M&Ms for a delightful holiday treat.

Ingredients

  • 2 cups unsweetened coconut, (4 oz) desiccated coconut
  • 1/2 cup sweetened condensed milk
  • 5 Tbsp coconut oil (solid form, not melted)
  • 1 tsp vanilla extract
  • 1/2 cup Red and Green M&Ms, plus more to decorate
  • 1 cup semisweet chocolate chips
  • 1 Tbsp coconut oil
  • 1/2 cup white chocolate chips, melted

Instructions

  1. Pulse the unsweetened desiccated coconut in a food processor or blender until it reaches the consistency of fine breadcrumbs.
  2. Transfer the processed coconut to a medium bowl.
  3. Add 1/2 cup of sweetened condensed milk to the coconut.
  4. Add 5 tablespoons of solid coconut oil to the mixture.
  5. Add 1 teaspoon of vanilla extract to the mixture.
  6. Stir all the ingredients together until they are well combined.
  7. Gently fold in 1/2 cup of red and green M&Ms until just incorporated.
  8. Use a small cookie scoop to portion out the mixture into even balls onto a parchment-lined baking sheet.
  9. Roll each portion between your hands to smooth the surface of the balls.
  10. Refrigerate the coconut balls for 15 minutes to firm up.
  11. In a small microwave-safe bowl, combine 1 cup of semisweet chocolate chips and 1 tablespoon of coconut oil.
  12. Heat the chocolate mixture in the microwave in 15-second increments, stirring after each increment, until the chocolate is completely melted and smooth (this usually takes 45-60 seconds total).
  13. Dip each chilled coconut ball into the melted chocolate, allowing any excess chocolate to drip back into the bowl.
  14. Return the dipped coconut balls to the parchment-lined baking sheet.
  15. Refrigerate the chocolate-coated balls until the chocolate is firm and set.
  16. Melt 1/2 cup of white chocolate chips in the microwave (this usually takes 30-45 seconds total), stirring until smooth.
  17. Transfer the melted white chocolate to a small ziploc bag.
  18. Snip off a tiny corner of the ziploc bag.
  19. Drizzle the melted white chocolate over each firm chocolate-coated coconut ball.
  20. Immediately top each drizzled coconut ball with additional red and green M&Ms before the white chocolate sets.

Notes

Ensure coconut oil is solid when adding to the coconut mixture for best texture.
Chill the coconut balls thoroughly before dipping in chocolate; this prevents them from falling apart.
Melt chocolate slowly in short bursts to prevent seizing.
Decorate with extra M&Ms immediately after drizzling white chocolate before it hardens.
