Adorable individual hand pies filled with sweet cherry pie filling, encased in a flaky golden crust, perfect for any occasion.

  • 3 boxes refrigerated pie crust (2 crusts each box)
  • 1 can cherry pie filling (21 ounce)
  • 2 large eggs
  • 2 Tablespoons water
  • Coarse sanding sugar (optional)

Instructions

  1. Preheat oven to 350 degrees F (175°C).
  2. Thaw the refrigerated pie crusts according to package directions.
  3. Line a large cookie sheet with parchment paper. Set aside.
  4. In a small bowl, whisk together the 2 large eggs with 2 Tablespoons of water to create an egg wash. Set aside.
  5. Using a rolling pin, roll out one thawed pie crust until it is between ¼ inch and ⅛ inch thick, ensuring there are no cracks.
  6. Use a 3-4 inch cookie cutter (such as a holiday tree shape) to cut out approximately 7 shapes from the rolled crust.
  7. Place the cut-out shapes onto the parchment-lined baking sheet.
  8. Spoon about 1 to 1 ½ Tablespoons of cherry pie filling into the center of each cut-out shape.
  9. Brush the border around the filling with the prepared egg wash.
  10. Gently place another cut-out shape over the top of the filling.
  11. Starting at one edge, lightly press the top and bottom crusts together to seal, being careful not to press down on the filling.
  12. Using the tines of a fork, firmly press around the entire seam of each hand pie to secure the edges.
  13. Using a sharp knife, make a few small slits in the top crust of each hand pie for venting.
  14. Brush the top crusts of all hand pies with the remaining egg wash.
  15. Sprinkle with coarse sanding sugar, if desired.
  16. Bake for 20-25 minutes, or until the crusts are golden brown.
  17. Transfer the baked hand pies to a cooling rack.
  18. Serve warm or at room temperature.

Notes

Ensure pie crusts are thawed but still cool for best handling.
Do not overfill; 1.5 tablespoons of filling is usually enough.
Press seams firmly to prevent leaks during baking.
Cut vent slits on top to allow steam to escape.
