Fudgy brownie cookies with a surprise creamy Biscoff center, perfect for a decadent treat.

Ingredients

  • 90 g vegetable or canola oil
  • 200 g caster sugar
  • 2 eggs
  • 1 tsp vanilla extract/essence
  • 175 g plain flour
  • 50 g cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 8 heaped teaspoons of Biscoff Spread approx. 250g

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Line a plate or tray with baking paper.
  3. Scoop 8 heaped teaspoons of Biscoff spread onto the lined plate.
  4. Place the Biscoff scoops into the freezer while you prepare the cookie dough.
  5. In a large bowl, or the bowl of a stand mixer, mix together the caster sugar, oil, vanilla, and salt.
  6. Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next.
  7. Sieve in the plain flour, cocoa powder, and baking powder into the wet ingredients.
  8. Mix until just incorporated, being careful not to overmix the dough.
  9. Using 2 spoons, scoop the cookie dough into 8 equal portions, about 75g each.
  10. Flatten one portion of cookie dough into your hand.
  11. Place a frozen ball of Biscoff spread into the center of the flattened dough.
  12. Carefully wrap the cookie dough around the Biscoff ball, sealing it completely.
  13. Roll the dough into a smooth ball.
  14. Place the stuffed cookie ball onto a large baking tray lined with baking paper.
  15. Repeat with the remaining dough and Biscoff balls.
  16. Place the entire baking tray with the cookies into the freezer for 10 minutes.
  17. Bake the cookies for 15 minutes.
  18. Allow the cookies to cool on the baking tray for at least 20 minutes to allow the Biscoff to set slightly.

Notes

Freeze the Biscoff spread thoroughly for easier handling and stuffing.
Do not overmix the cookie dough once the flour is added to ensure fudgy cookies.
