Deliciously moist and flavorful apple cider cupcakes topped with a rich, spiced buttercream frosting, perfect for fall.

  • 1 1/3 cup oat flour (certified gluten-free) or gluten-free all purpose flour (or regular flour)
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp allspice
  • pinch of cloves
  • 1/2 cup butter, melted (coconut oil or dairy-free butter alternative)
  • 1/2 cup brown sugar
  • 1/3 applesauce (sweetened or unsweetened)
  • 1/2 cup apple cider
  • 1 tsp vanilla
  • 2 eggs
  • 1/2 cup butter, softened
  • 1-2 tbsp water, milk or more apple cider
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • pinch of nutmeg
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Line a cupcake pan with cupcake liners and spray them with non-stick spray.
  3. In a small mixing bowl, combine oat flour, baking powder, salt, 1 1/2 tsp cinnamon, 1/2 tsp nutmeg, allspice, and cloves.
  4. Stir the dry ingredients together until well combined.
  5. In a large mixing bowl, cream the melted butter and brown sugar together with a mixer.
  6. Add applesauce, apple cider, and 1 tsp vanilla to the wet mixture.
  7. Mix again until all is well combined.
  8. Add eggs to the wet mixture.
  9. Beat the eggs into the mixture for a minute.
  10. Add the dry ingredients mixture to the wet ingredients.
  11. Stir the batter together until you have a smooth cupcake batter.
  12. Fill your prepared cupcake liners about 3/4 way full with batter.
  13. Bake for 18-22 minutes, or until the tops are springy to touch and a toothpick comes out clean.
  14. Remove cupcakes from the oven and let them cool completely on a wire rack.
  15. While cupcakes cool, prepare the buttercream.
  16. In a large mixing bowl, combine the softened butter, 1 tbsp of apple cider, 1 tsp vanilla, 1/2 tsp cinnamon, and a pinch of nutmeg.
  17. Blend together well with a hand mixer.
  18. Add 1 cup of powdered sugar to the bowl.
  19. Mix well with a hand mixer.
  20. Add another cup of powdered sugar to the bowl.
  21. Blend together again until smooth.
  22. Beat the frosting for a minute or two, or until it is nice and fluffy.
  23. If the frosting is too thick, add another tablespoon of apple cider (or water/milk) until it reaches the desired consistency.
  24. Once cupcakes are completely cooled, frost them.
  25. Optionally, add sprinkles or cinnamon sugar on top.
  26. Devour!

Notes

Ensure your oven is preheated to 350°F before baking.
Do not overmix the cupcake batter once dry ingredients are added.
Use softened butter for the buttercream for the best creamy texture.
Make sure cupcakes are completely cool before frosting to prevent melting.
