Buttery, tender, and incredibly simple shortbread cookies with a fun M&M twist, requiring just 4 pantry staples.

Ingredients

  • 230 grams (1 cup / 2 sticks) butter, room temperature
  • 65 grams (1/2 cup) icing sugar or powdered sugar
  • 2 teaspoon vanilla extract
  • 280 grams (2 cups) plain flour or all purpose flour
  • 150 grams (3/4 cup) mini M&M candy

Instructions

  1. Place butter in a large mixing bowl.
  2. Beat butter with an electric mixer until pale and creamy.
  3. Add icing sugar, vanilla extract, and plain flour to the bowl.
  4. Beat briefly with the electric mixer until a soft cookie dough forms.
  5. Stir through mini M&M’s by hand.
  6. Place the dough on a piece of baking or wax paper.
  7. Use your hands to mould the dough into a long circular roll.
  8. Roll the dough tightly in the baking paper.
  9. Squeeze the ends of the paper shut to seal the dough log.
  10. Place the dough in the fridge for at least 30 minutes.
  11. Preheat oven to 180 C (350 F) standard.
  12. Preheat oven to 160 C (320 F) fan-forced.
  13. Line a baking tray with baking paper.
  14. Use a large knife to cut the chilled dough into 1/2 inch thick slices.
  15. Place cookie dough slices on the prepared baking tray.
  16. Bake cookies for approximately 12-14 minutes.
  17. Bake until the edges are golden.
  18. Leave cookies to cool completely on the baking tray.
